Roasted Brussels Sprouts with Bacon Recipe

One of my favorite recipes this holiday season was of the green variety. My husband loves Brussels Sprouts and I always thought they were a bit boring to cook. So I decided to hunt for a recipe that would spice them up a bit, but was also conducive for a large party of people. The end result made even the pickiest meat and potatoes eater swoon. Victory for the greens!

Here is what you need: 

1 lb of Brussels Sprouts, trimmed at the base and cut in half

1/2 onion finely chopped

1 red pepper, chopped

1 lb duck bacon

Salt and pepper to taste

Preheat the oven to 375 degrees. Trim and slice the brussels sprouts, then toss in 2 tablespoons olive oil with salt and pepper. Spread over a large baking sheet. Bake for 25 minutes. On the stove, sautee the onion in 2 tbls olive oil, with 1 tablespoon of minced garlic. Add red pepper. In a separate pan, cook the bacon (I prefer not totally crispy). Remove from pan to cool, then chop. Once cooked, remove brussels sprouts from oven and mix all ingredients together. Either serve hot right away, or cover and refrigerate. Can be reheated in the microwave (!) later. Serve 8-10. Double proportionately for more people.
