When planning a wedding, it's important to remember the out of town guests. Almost always that means preparing a welcome bag for their hotel room. Most of the time this comes equipped with water, koozies, gum, chips, and, of course, cookies!

A fail-proof cookie recipe isn't easy to come by, so we decided to provide you with two: one easy recipes for wedding welcome bag cookies, for when you're down to the wire; and one a little more challenging if you are aiming to impress. And what do both of these have in common? Well, if it's not going to be peanut butter, then it will definitely be chocolate. Chocolate it is.

Homemade (Easy) Chocolate Chip Cookies

These cookies are easy, traditional and delicious. Who doesn't love a good chocolate chip cookie? If you want to take the baking to the next level, make an extra batch or two and serve them at the wedding as a late night snack.

1 c. soft butter

1 c. brown sugar

1t baking soda

1/4 c. boiling water

1t vanilla

11/4 c. flour

1/2 t salt

2 c. quick oats

12oz chocolate chips

Cream butter and sugar together.  Dissolve baking soda in boiling water.  Stir into butter/sugar mixture.  Add vanilla, then dry ingredients and chocolate chips.  Drop balls into ungreased cookie sheet.  Bake 10-15 minutes at 350.

Chocolate Brownie Cookies

This recipe is from my friend Lorraine. She's an amazing baker and her cookies are simply to die for. Give these a try whether or not you are hosting out of towners.

1 cup all purpose flour

1/4 tsp salt

2 tsp instant coffee

1/4 cup boiling water

2 oz unsweetened chocolate- coarsely chopped

3 oz unsalted butter at room temperature

1/2 tsp vanilla extract

1 cup light brown sugar (firmly packed)

2 large eggs at room temperature

8 oz walnuts (coarsely chopped)

6 oz semisweet chocolate morsels (or 6 oz bittersweet chocolate coarsely chopped)

Preheat oven to 350 F. In small saucepan, dissolve the coffee in the water. Add chocolate and over LOW heat melt the chocolate with the water/coffee mixture. Stir until smooth. Mixture will be thick. Set aside to cool slightly. In medium sized bowl sift together the flour and salt. Set aside. In large bowl of electric mixer, beat the butter until soft. Add vanilla then add sugar a few tablespoons at a time until well incorporated into butter. Add chocolate mixture (can still be warm) to butter and beat until smooth and thoroughly mixed. Scape down sides to make sure all ingredients are mixed. Add eggs one at a time beating well after each addition and scraping down sides to thoroughly mix. Turn off the mixer. Add the sifted flour/salt mixture. On low speed mix only until flour is incorporated. Do not over mix...Remove from mixer. Add nuts and chocolate morsels and using spatula fold them into batter. Using a heaping tablespoon of mixture for each cookie. Place cookies on parchment lined cookie sheets 2 inches apart. Bake for 13 to 15 minutes reversing sheets from top to bottom once during baking to ensure even baking. The cookies are done if they just barely spring back when lightly pressed with your finger. Do not over bake.

Carrot Cake Cupcakes

The perfect carrot cupcake recipe for a wedding shower dessert

A few weeks ago I was lucky enough to be spoiled by my aunt, stepmom and sisters for my "friend" wedding shower. It was absolutely amazing to have all of my favorite people in one room. And typically when you have a room full of women, dessert tends to get skipped over. However, in the case of my shower, everyone was scrambling for seconds.

The allure at the dessert table was a beautiful assortment of cupcakes put together by my stepmom, Jayme. They looked like they came straight out of a bakery and tasted equally as amazing—she prepared chocolate, vanilla and carrot cake. Because I can't giveaway all of her secrets at once, and because it's my favorite, here is the recipe for Jayme's Carrot Cake Cupcakes.

Ingredients:

3 sticks unsalted butter soft

1 c packed light brown sugar

1 c white sugar

2 tsp vanilla

3 large eggs

2 1/2 flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

dash salt

1/2 c pure apple juice

1 1/2 c grated carrots (3 or 4)

1 c peeled and shredded sweet potato (1 large)

1 large granny smith apple chopped and peeled

1 c chopped toasted pecans

Directions:

Preheat oven to 350 degrees. Blend butter and sugars together for 3 or 4 minutes on medium speed  (use your mix master!). Scrape sides, add eggs one at a time and beat for 20 sec after each, then scrape sides. In another bowl add flour, baking soda, powder, cinnamon and salt. Whisk together.  Add dry ingredients to butter mixture 1/3 at a time alternating with apple juice 1/3 at a time. Mix 45 sec between each ending with flour. Stir in the remaining ingredients, the carrots, sweet potato, apple and nuts. Fill cupcake molds 2/3 of the way and bake. Test for doneness  depending on size of cup cake mold  15-25 minutes.

FROSTING

16 oz cream cheese softened

8 tablespoon or 1 stick unsalted butter soft

2 tsp vanilla

1 tablespoon fresh lemon juice

2 lbs or one bag powdered sugar

Mix cream cheese and butter until smooth. Add vanilla and lemon juice and beat. Gradually add the sugar until blended and smooth. Refrigerate for at least one hour and frost cupcakes when cooled.

No-Bake Oatmeal Fudge Cookies

This easy 15-minute dessert that is a guaranteed hit, plus they look really great on a platter. I mean, what group of women doesn't like peanut butter and chocolate? That's what I thought. This recipe is seriously one of my favorite cookies ever. I like to make them and freeze them, then pull them out every once in awhile to satisfy my peanut butter addiction. But I've also brought them to showers where guests couldn't get enough.

Ingredients: 

2 cups sugar, 1/2 cup fat-free milk, 4 tbsp cocoa powder; 1 stick unsalted butter; 1/8 tsp salt; 1/2 cup peanut butter; 3 cups Quaker oats

Directions: Combine sugar, milk, cocoa, butter and salt in a heavy saucepan. Bring to a boil over medium high heat, stirring constantly. Boil 1 minute and remove from heat. Stir in peanut butter. Add oats and mix thoroughly. Drop by teaspoonfuls onto waxed paper. Cool completely.

Unbaked Graham Cracker Cookies

Growing up and still today, I love everything my Grandma makes in the kitchen. So when she told me about a recipe that her sister made 70 years ago, I knew it was something we had to include. As she said, these cookies were considered delicious then, and they still are today. Warning: when dishing out this recipe, people might be a little appalled by just how rich the contents are. But what better place to splurge than a wedding shower?

Ingredients:

Graham crackers, 1 c. butter, 1/2 c. milk 1. c. sugar, 1 egg, 1. cup coconut, 1 c. chopped walnuts, 1 c. graham cracker crumbs, 1/2 c. softened butter, 2 c. powdered sugar, 1 tsp. vanilla. 

Directions: Layer whole graham crackers in the bottom of 9x13 pan. In a saucepan, melt 1 cup butter, add ½ cup milk, 1 cup sugar and I small, lightly beaten egg. Cook ingredients over medium heat, stirring constantly until it comes to a full boil. Then take it off the burner. Add: 1 cup coconut, 1 cup chopped nuts and 1 cup graham cracker crumbs. Pour mixture over the top of crackers (in pan). Cover with another layer of whole crackers. Frost and chill over night or for 8 hours. Then cut into squares.

To make the frosting combine: ½ cup softened butter, 2 cups powdered sugar, 1 tsp Vanilla, milk as needed. Keep refrigerated until serving time.

Chocolate Covered Peanut Butter Balls

This week, I guess we are keeping it in the family. My aunt used to make these every time we would go visit her in Texas. Sometimes they were readily made when we got there, other times, my sister and I would beg her to make them and we would all try to help. These cookies are easy, freezable and have the winning combination of chocolate and peanut butter. I love them big time.

Ingredients: 3 c. crushed Rice Krispies, 1 stick oleo, 1 lb. powdered sugar, 18 oz. jar crunchy peanut butter, 12 oz package of chocolate chips, 5-6 cubs of chocolate candy bark.

Directions: Measure three cups Rice Krispies, then crush. Mix in 1 lb powdered sugar and jar of peanut butter. Melt 1 stick of oleo  and mix together. Spread a sheet of parchment paper over a cookie sheet. Create balls about 1" in size, then refrigerate. Melt one 12 oz package of chocolate chips and 5-6 cubes of chocolate candy bark in microwave (may need more of each!).   Dip peanut butter balls in chocolate.  Harden in refrigerator.  Makes 70 +/-.

Date Night Pineapple Pork Chop Recipe

Making up my own recipes is one of my favorite pastimes. But usually for me that means substituting out ingredients in already familiar dishes and building from there. So when I asked my fiancé to pick whatever he wanted me to cook up for date night and he requested pork chops, I knew I was going to have to get creative. I had made them only once years before and they turned out...well, not so hot. Not wanting to repeat that track record, I did some research and pulled from a few highly rated recipes and rolled the dice. I take date night very seriously.

The main concern anyone should have when making pork chops is keeping it from drying out. So I started with a light marinate and created a stuffing that had a lot of natural juices. Then, I monitored the temperature with a meat thermometer incessantly to make sure I didn't over cook it.

The end result was so darn good that we barely spoke a word during dinner—a rarity if you know me at all. In truth, it's one of the best meals I can remember making. And it was pretty easy, if I do say so myself.

Pineapple Pork Chop Recipe

Ingredients:

2 large butterflied pork chops

1/2 red onion chopped

1/2 cup blue cheese

1 apple diced (I like Gala)

1/2 cup finely chopped pineapple 

2 c. garlic and herb chicken broth

1/2 c. red wine vinaigrette 

Worcestershire sauce

Directions: Preheat oven to 350 degrees. In a medium bowl combine broth, vinaigrette and Worcestershire with pork chops and set aside for 30 minutes. Then, combine apple, onion, blue cheese and pineapple in a small bowl. Remove pork chops from marinade and stuff with half of pineapple mixture, topping the meat with the remainder of the mixture. Then, bake for 60 minutes, or until the internal temperature reaches 165. Serve it up with bacon-wrapped asparagus, roasted fingerling potatoes and cinnamon applesauce.  YUM.

Grilled Cheese and Tomato Soup

During these cold, winter months, everyone craves the comfort that only a good plate of grilled cheese and tomato soup can cure. So when planning a wedding shower, this classic favorite could be the ultimate concoction to warm up a group before it's time to open presents. Start with an easy recipe for tomato soup, then get creative by offering a gourmet-style grilled cheese.

Tomato Soup a la Grandma

Ingredients:
3 cups cooked tomatoes (28 oz can)
1 tbsp minced onion
½ tsp salt
¼ tsp pepper – dash Tabasco sauce
2 tsp sugar
2 tbsp butter or margarine
1 tbsp vegetable oil
2 tbsp flour
1 can evaporated skim milk

Directions: Cook first ingredients 15 minutes. Strain. Cook flour in butter and oil until bubbly. Add milk slowly and cook until thickened. Add tomato mixture stirring constantly. Heat just to simmer – do not boil. Serve hot and garnish with a sprig of basil. Double the recipe to serve up to 10 people.

Gourmet Grilled Cheese

The key to a good grilled cheese, according to FifteenSpatulas, is to put healthy things on it! We were inspired by her thinking, so here is one of our favorite grilled cheese recipes, equipped with gruyere cheese, avocado and heirloom tomatoes. Serves 6-8 people. Double the recipe as needed.

Ingredients:
12 slices italian bread 5 sliced heirloom tomatoes 5 sliced avocados 2 lbs gruyere cheese, thinly slices salt and pepper salted butter

Directions: Heat up nonstick skillet over medium heat. Take slices of bread, butter both sides. Toast directly on the skillet until golden brown. Add cheese, tomato and avocado and season with salt and pepper. Sandwich one more layer of cheese under the second piece of bread. Add butter to the skillet and brown both sides of the sandwich until the cheese is melted and the bread is golden brown. Cut into quarters and serve on a large platter so guests can grab a few and delightfully dip the sandwiches into the tomato soup. YUM.

Greek Chicken with Feta

Amazing recipe for Greek chicken.

Maybe my late Grandma Roush had something in mind when she sent this recipe for Greek Chicken my way, knowing that it would come in handy in my married life. (In my experience, there is nothing a Greek man loves more than good cooking, except maybe IU Basketball and a comfortable couch). So in honor of my big fat Greek wedding, I am passing this greek chicken with feta recipe to you, with love. Make it in bulk for a bridal shower luncheon and your guests will thank you.

Greek Chicken with Feta Recipe

Ingredients:

½ lb feta cheese, sliced

6 chicken legs with thighs

1 tbsp, 1 tsp olive oil, divided

4 medium onions, thinly sliced

2 tsp minced garlic

1 17 oz can plum tomatoes, coarsely chopped, with liquid.

½ tsp oregano

¼ tsp salt

fresh ground pepper

Directions:

Place feta in bowl with cold water to cook. Set aside. Remove skin and fat from chicken. Heat 1 tbsp oil in 10” heavy skillet/cover. Brown chicken over medium heat, turn several times. Remove. Add tsp of oil to pan with onions. Cook low heat, stirring 10 minutes. Add garlic and cook five minutes or until onions start to brown. Add tomatoes, oregano, chicken – salt if desired, and generous pepper. Cover, boil, reduce heat to medium/low and simmer for 3 minutes. Remove feta from water, arrange on top of chicken. Cover skillet and cook 15 more minutes until cheese is melted. Makes 6 servings.

Cheesy Potatoes

Perfect cheesy potatoes recipe for brunch, lunch or dinner. 

These cheesy hash browns are like the Mac 'N Cheese of potatoes—basically universally delicious.. The recipe is so easy to make that it continues to surprise and delight me every time I pull out the cookbook. My friend Jessica prepared this for a holiday brunch and I was instantly hooked—I think every one of us hounded her for the recipe and I made it several times last winter. I was again reminded of this gem during the holidays last week, where I whipped up a batch of these cheesy hash browns to go with Christmas brunch. This is the perfect dish to serve at a wedding shower, bridal luncheon or at the post-wedding brunch. Did I mention how easy it is?

Cheesy Potatoes Recipe

Ingredients:

  • 2 lbs hash brown frozen potato squares
  • 1/2 c sour cream
  • 1/2 c milk
  • 1/2 c onion
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 tsp salt
  • 1 c Cheddar cheese
  • 1/2 c melted butter
  • 2 c crushed cornflakes

Mix all ingredients together (except for butter and flakes) and put in 9X13 pan. Bake at 350 for 45 minutes. The last 15 minutes, put 2 cups crushed cornflakes on top and pour melted butter all over. Make the night before so the potatoes thaw out—which is also great for the flavor and the cooking time. Might need a little bit longer depending on your oven and if the potatoes are thawed in advance. Feel free to get creative and mix in bacon pieces and green onions to add some extra flavor.

Spinach Salad

To impress guests with a healthy and sophisticated second course, try this homemade spinach salad.

Ingredients

  • 1 cup fresh olive oil
  • 1 cup cider vinegar (slightly less than a cup…)
  • 1 Tbsp. Dry Mustard
  • ½ Cup Sugar
  • 1 Tbsp. Poppy Seed
  • 1 tsp Grated Onion
  • 6 Strips crumbled and cooked bacon
  • 2-3 hard boiled eggs
  • 3 cups spinach
  • 3 cups lettuce

Mix olive oil, cider vinegar, dry mustard, sugar, poppy seed and onion in a large mixing bowl. Cook bacon until crispy and set aside to cool. Add the dressing to the salad consisting of ½ spinach and ½ lettuce, all torn into bite size pieces. Mix together. Add the crumbled bacon and eggs. Salt and pepper to taste. Top with Croutons.

Mexicali Salad

This fun and crunchy salad is full of flavor. So this fun salad is one of the greatest recipes that you forgot you loved. It's a golden oldie that blends taco flavoring and Doritos to create an amazing flavor explosion in your mouth. What else could you ask for? Splurge, it's worth it!

Ingredients

  • 1 lb ground beef, browned with taco seasoning
  • 1/2 cup chopped onion
  • 1/4 lb shredded cheddar cheese
  • 1 chopped tomato
  • 1/2 bottle Catalina dressing
  • 2 cups crushed Doritos

Combine all ingredients and toss in large bowl with 4 cups chopped lettuce. Top with Doritos and serve. 

Broccoli Salad

This Broccoli Salad is the perfect recipe for a luncheon baby or bridal shower. The flavor is absolutely incredible and it's actually pretty healthy. Your guests will beg you for the recipe.

Ingredients

  • One Bag Pre-packaged Broccoli Slaw
  • One bunch of Green Onions (Chop‘em)
  • 1/2 Cup Apple Cider Vinegar
  • 1/2 Cub Vegetable Oil
  • 1 Packet Chicken Flavored Ramen Noodles
  • 1 Packet Oriental Flavored Ramen Noodles
  • 1/2 cup Sunflower Seeds—no shell
  • 1/4 Chopped Almonds (buy it sliced)
  • 1/2 Cup Shredded Cheddar Cheese

Mix the Broccoli Slaw Salad with the green onions in large bowl. Add the vegetable oil, apple cider, sprinkle on the seasoning packets from the Ramen Noodles—wait for the noodles—add sunflower seeds, cheese, and almonds. Mix together. Crush Ramen noodles—just from one of the packages—and add as topping. Chill for an hour before serving.

Brie En Croute with Fig Chutney

1/4 pound dried figs, chopped

1/4 pound dried apricots, chopped

1/4 pound dried peaches, chopped

1/4 pound raisins

1 small onion, finely chopped

1/2 cup cider vinegar

2 tablespoons toasted pistachios

2 tablespoons toasted almonds

1 tablespoon crystalized ginger

1 teaspoon minced green chile pepper

Sea salt and pepper to taste

1 lemon, zest and juice

Combine the dried fruits, onion and vinegar in a medium saucepan, and add enough water to cover the ingredients. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes or until the mixture achieves the thickness of honey, stirring frequently. Puree the pistachios, almonds, ginger, chile pepper, salt and pepper in a food processor, or with a mortar and pestle. Add with lemon zest and juice, stirring well.Spread fig chutney on top of brie wheel, wrap in puff pastry and bake at 400 degrees until golden, about 20 minutes.

Goat Cheese Marinara

1 Package goat cheese (in a block or round, not crumbled)

1 Jar of your favorite marinara sauce (or make your own, see page ___)

Optional: pine nuts and/or herbs of your choice for garnish (such as basil, oregano, or your favorite Italian blend)

Preheat oven to 350. Place goat cheese in an oven safe baking dish (that can also be used as your serving dish). Morph goat cheese into whatever shape you prefer. Cover with marinara sauce. Sprinkle with pine nuts and herbs (optional). Bake in oven until goat cheese is heated through. Serve with toasted pita, or any dipping mechanism of your liking

Simple Sausage Stuffed Mushrooms

1 pound ground pork sausage or sausage links

2 8 ounce packages cream cheese, softened

2 8 ounce packages fresh mushrooms, stems removed

1/2 cup Shredded Parmesan Cheese

Dash of Paprika

DIRECTIONS:

Set oven to broil. Cook sausage over medium high heat until brown. Drain skillet and add sausage to a medium sized bowl. Mix cream cheese with the sausage. Stuff mushroom caps with the cream cheese and sausage mixture. Top each mushroom with a dash of paprika. Sprinkle Parmesan over the top. Arrange stuffed mushroom caps on a medium baking sheet. Broil in the preheated oven 2 to 3 minutes, until lightly browned.

It's wedding season! If you're not attending shower after shower, you're probably the one hosting — and creating the menu takes a lot of work. To give you a head start on planning, we put together a sample menu of some mouthwatering recipes that we love. From easy appetizers and dessert, to a gourmet mushroom lasagna, this is one shower menu that has something for everyone.

Chicken Spread

If ever there was a party pleaser, it's this totally addictive chicken dip appetizer. My grandmother used to make it and now my mother brings it to almost every event and family party. It's perfect for showers because of it's unique (and delicious!) flavor, and the recipe makes more than enough to go around. Ingredients: 1 c. mayo; 1 c. sour cream, 2 tbsp crystallized ginger, finely chopped; 10-12 oz deli chicken, finely chopped; 1 8oz can water chestnuts, drained and finally chopped; 2 tsp soy sauce; 2 tbsp minced green onions Directions: Mix first 5 ingredients together, then add water chestnuts and chicken, and mix well. Chill for at least an hour or overnight. Serve with crackers.

Broccoli Salad

What would a shower be without a good broccoli salad? This one is simple and fantastic - not to mention a staple crowd favorite. Healthy substitutions like light mayo make this a great choice. And if you're feeling extra creative, add 1/2 c. of chopped walnuts for some texture. Ingredients: 3-4 cups of broccoli flowers; 2/3 c. sliced green onions; 1 1/2 c. of crisp bacon crumbed (can sub for real bacon bits); 1 cup of grated cheddar cheese; 1 c. light mayonnaise; ½ c. sugar or Splenda; 1 Tbsp. red wine vinegar Directions: Combine broccoli, onion, bacon and cheese in a large mixing bowl. Separately mix mayo, sugar and red wine vinegar and pour over the other ingredients. Mix well.

Mushroom Radicchio Lasagna

This main dish is a new twist on an old favorite. Because there are a lot of steps, make sure to give yourself enough time, or make it the day before and bake before the party. Follow each step, starting with preparing the sauce and then move onto the cheese mixture. From there? Layer and bake. The result is a smokey and delicious lasagna that will impress even the toughest critics. Ingredients: 4 tbsp. vegetable oil; 1 ½ lbs radicchio (chopped);  2 ¼ lbs mushrooms, sliced/quartered; salt and pepper; 1 stick unsalted butter; ¼ c. flour; 2 ½ c. milk; 2 garlic cloves (minced—carefully chopped); 1 c. fresh flat leaf parsley; 2 Tbsp. Fresh lemon juice; 2 c. grated smoked mozzarella; 1 cup grated mozzarella; One package oven-ready (no-boil) noodles Directions: To make the sauce, heat 2 tbsp. Oil in 14 inch skillet. Add radicchio and cook until wilted (5 minutes). Finely chop half of the mushrooms and add to mix, seasoning with salt and pepper. Cook for Five more minutes. In a heavy sauce pan melt butter, whisk in flour, and add milk slowly. Season with salt and pepper, and simmer for about 5 minutes. Stir in mushroom mixture. To make the cheese mixture heat 2 tbsp oil, add garlic and cook; then add remaining sliced mushrooms. Stir in parsley, salt and pepper and let cool. Add 1 c. smoked mozzarella and 1 c. regular mozzarella Coat 9x13 baking dish with 1 cup sauce, then layer with lasagna noodles, cheese mixture, and sauce. Continue to layer, top with remaining cup of smoked mozzarella. Bake at 375 for 45 minutes
